What’s your guys’ idea of a romantic date? Are you the white tablecloth, candles, fancy dinner with a reservation that has to be made weeks in advance type? Or are you a little more down home and okay with snacking on nachos and watching netflix with your boo? Me, I’m somewhere in between. I appreciate dressing up and making it a special occasion, but I’m really happy staying in too. Actually, who am I kidding? I love staying in – I can’t think of anything better than a fancy night in where you light all the candles you want and dress up to stay in to eat a simple sous vide rib eye steak.

I feel like steak is one of those things that people love eating but don’t really make much and I don’t know why because it’s really the easiest thing to do. Just make sure you have a high quality, thick cut steak, plenty of salt and pepper, and a searing hot pan and you’ve got yourself a restaurant quality steak. And, if you want to ensure that you have a perfectly cooked steak every time, I recommend sous vide.

Sous vide takes the mystery out of cooking, making it scientific and reproducible every single time. I guess that doesn’t sound very romantic but if perfect results are what we’re going for then there’s just no other way. Plus with sous vide, all the cooking time is hands off which means more time to spend with your boo.

Simple Sous Vide Rib Eye Steak Recipe
serves 2 for a light meal, or 1 if you’re looking for something hearty


  • 16 oz boneless rib eye
  • salt and freshly ground pepper
  • basil garlic butter

Fill a large pot or heatproof container with water and set the sous vide machine to 130-135°F depending on if you want the steak rare or medium rare. I went with 135°F.

Generously season the steak with salt and pepper on both sides. Place in a vacuum seal bag and seal. Sous vide for 1 hour.

When the hour is up, take the steak out of the bag (discarding the juices) and lightly pat dry. Heat up a heavy cast iron pan over very high heat and sear each side for 1-2 minutes, getting a good crust. Remove from the pan and let rest.

Slice against the grain and top with the basil garlic butter. Enjoy!

Basil Garlic Compound Butter Hearts Recipe


  • 1/4 cup room temp butter
  • 3-5 basil leaves, minced (I used Thai basil)
  • 1 clove garlic, minced
  • salt and freshly ground pepper

Mix all of the ingredients together. Line a small heart shaped cookie cutter with plastic wrap and pack the soft butter into the cookie cutter, making sure that all of the holes are filled. Place butter, with cookie cutter, in the fridge until firm, about 1 hour. Slice, if desired and place on hot steak. Leftover butter tastes great on toast.
