This is one of those dishes that I waffled with posting. On the one hand, is it really a recipe? But then on the other, when I took the first bite, I legit thought to myself, this is one of the best things I’ve made in a long time. It might be because right now I (and everyone else I’m guessing) is in need of something simple and comforting. There was something so satisfying about this dish. Maybe it was the chewy udon, maybe it was the homemade pesto…but I’m pretty sure it was the everything bagel spice.

Everything bagel spice is LIFE. I love that mix of dried onions, dried garlic, salt, and poppyseeds. I think the poppyseeds are what make everything bagel so good. I should really use poppyseeds for more than just lemon poppyseed loaf. I love their crispy crunchiness and that nutty flavor.

Anyway, this is the easiest recipe in the world, especially if you have some homemade pesto in the fridge. Of course you can use store-bought too, if that’s your jam and the stores still have any. For the udon, I always prefer the kind that comes in frozen bricks at the Asian grocery store (it’s called sanuki udon) but if you can only find those vacuum sealed packs of udon (they usually call it nama udon – which means fresh udon but to be honest, it’s not fresh) those will work too. To be honest, that’s what I used here because I had some stashed away and really, I’ve been having anxiety about leaving the house. You could even use another noodle all together but I think it’s the thick chewiness of the udon that really works well here.

After your udon noodles are cooked – which in most cases is merely a question of warming them up, toss the noodles with pesto, then top with everything bagel spice and seaweed. The everything bagel plus seaweed is an ultra umami bomb in the best way possible!

Chewy udon noodles fried with pesto topped with everything bagel spice, parmesan, and seaweed.

  • 1 package udon
  • 1-2 tbsp pesto
  • salt and freshly ground pepper to taste
  • everything bagel seasoning to taste
  • parmesan to finish
  • seaweed strips if desired


  • Cook the udon according to the package instructions. Reserve 1/4 cup cooking water and then drain well.

  • Toss the drained udon with the pesto, and fry in a non-stick frying pan over medium heat, loosening with some cooking water if needed. Season with salt and pepper.

  • Sprinkle on a generous amount of everything bagel seasoning. Finish with parmesan and seaweed, if desired.
