I know, I know, everyone’s looking to get a little bit more lean and healthy in January. But, you can’t sacrifice flavor either right? I get it, it’s the new year and people want to start things off on the right foot, but it’s January, it’s cold outside and I don’t exactly want to be eating straight salads when I’m trying to stay cozy. So, here are some healthy-ish things for you to make instead.
I’ve got:
- Baked Things because baking is better than deep frying when you want to heat up your house.
- Zoodles because I need to feel that I’m living that noodle life but maybe sort of want to cut down on carbs.
- Bowls because insta tells me bowls are healthy. Just kidding, these bowls are kinda healthy.
Read on to get some ideas on what to make in January!
Let’s Get Baked:
Crispy Oven Baked Popcorn Cauliflower – so creamy on the inside and crispy on the outside. A big bowl of this cauliflower popcorn and netflix is my January jam.
Oven Baked Turkey Tenders – give me all the crispy oven baked turkey tenders. Especially when there’s honey mustard to dip.
Broccoli Cheddar Cheese Tots – it’s still healthy if you eat the whole recipe, right? These little tots are super addictive and healthy because they’re green.
Crispy Oven Fried Honey Garlic Tofu Bites – I use this oven baked tofu method all the time when I don’t feel like deep frying.
Oodles of Zoodles:
Dan Dan Zoodle Soup – a slightly spice, sesame-filled warming noodle soup with zoodles and ground pork. One of my faves.
Burrata Tomato Basil Zoodles – all the classic flavors of caprese, but with zoodles and burrata, because burrata.
Spicy Shrimp and Zoodles – I love how satisfying this dish is: plump and firm shrimp, and oodles of zoodles with garlic and fennel.
Chicken Zoodle Pho – just like pho, but hold the rice noodles :)
Bowled Over for Bowls:
Ahi Tuna Poke Quinoa Bowl – an easy shoyu sesame poke with either rice or quinoa.
Broccoli Soba Bowl – charred broccoli and soba, tossed up in a rice vinegar, soy, sesame dressing, with crushed red pepper for a bit of punch.
Quinoa Breakfast Bowl – a brunch/breakfast bowl that you’ll wanna munch on all day: quinoa tossed in a miso mustard dressing, topped off with avocado, softie eggs, and tofu puffs.
Avocado Pasta – You’re six ingredients away from a creamy vegan avocado sauce, perfect for tossing with pasta.

I’m totally with you on the cozy January vibes. Those zoodle recipes look so good! I’ve never been one to jump on the zoodle train, but I think I might have to try it out now! Also that popcorn cauliflower. Obsessed! xo
