Vietnamese gỏi cuốn are one of those funny foods that go by all sorts of names in English. I’ve seen them called Summer rolls, fresh Spring rolls, and salad rolls. I’ve always known them as salad rolls so that’s what I’m going with. Whatever you like calling them, they are pure handheld genius, especially when you start stuffing them with things that don’t traditionally go inside rice paper.

Case in point: that crispy, breaded, juicy pork known as tonkatsu. Tonkatsu is incredible no matter how you eat it (it’s especially awesome when you tuck it in between two slices of bread). So really, it wasn’t too much of a stretch when I decided that tonkatsu rolled in rice paper would make for a strangely delicious hybrid salad roll. I loved the contrast between the juicy panko crusted pork, crunchy cucumbers and slippery rice paper. I preferred mine with a bit of mustard, but Mike liked dipping his in a bit of fish sauce. Either way, these guys are definitely going to be eaten again soon!

Tonkatsu Salad Roll Recipe
makes about 12 rolls

  • 2 small pork chops, cut into even strips
  • salt and freshly ground pepper
  • 2 tablespoons flour
  • 1 egg, lightly beaten
  • 1 – 1/2 cups panko
  • oil for pan frying
  • 2-3 cups raw spinach
  • 1 english cucumber, seeded and cut into strips
  • 12 round rice paper wrappers
  • mustard, to taste
  • fish sauce vinaigrette, if desired

Lightly season the pork chop strips with salt and pepper and sprinkle with flour. Dip the chops into the beaten egg and then into the panko, making sure that all sides are coated. Heat up half an inch of oil in a large frying pan over medium high heat. Fry the chops until golden brown and cooked through, flipping once, about 2 minutes per side. Drain on paper towels.

Take a rice paper wrapper and completely submerge it in a bowl of hot tap water for 10-15 seconds. Place the wrapper on a plate or cutting board – it’ll continue to soften as your assembling your roll. Add fillings as desired: spinach, cucumber strips, crispy pork. Fold the bottom half of the wrapper up over the filling, hold the fold in place, fold in the sides and roll. Enjoy with mustard and fish sauce. Repeat as needed.

    As for me, I think my favorite birthday meal would have to be tangsuyuk, a Korean dish of crispy fried beef and sweet and sour sauce, obviously served with white rice and kimchi. As a kid it’s what I would ask for every year, and it holds a lot of good memories for me.

    Haha… growing up my B-day meal was always Banquet chicken (the fried chicken found in the frozen section of the grocery store). Who knows why?!? I just loved it. After having legit good food, I don’t think I can go back. My ultimate B-day meals runs the gamut, but I think the key is fatty/indulgent while still being low key or fun in some way: sushi, lobster mac & cheese, world’s best mac & cheese (Beecher’s flagship cheddar), or even some Fake Shake made with home ground short rib, chuck and sirloin. I have to start thinking now for my big day in December.

    My family and friends also go out for Ethiopian food for my birthday so it is my ultimate birthday meals. I love that we can order a huge variety of dishes to share and everyone is always happy. The flavors never cease to please.

    Also – I LOVE making summer rolls (we call them spring rolls or Vietnamese rolls in my house) and my favorite filling is Spicy Coconut Tofu Strips by Tofu-Yu (a bay area based company). These strips are a bit crunchy and have a great flavor for a veggie roll. I would love to figure out how to make them myself.

    My ideal birthday meal would be a combination of decadent assortment of yummalicious crispy fried things (Lumpia, chicken wings, calamari, tempura, etc) with perfectly made white rice (because it neutralizes all fried components – wink wink!) plus a gorgeous end of summer tomato salad (the acid also “neutralizes” the fried factor) and an assortment of melty cheesy carby goodness (grilled cheese, mini mac & cheese, state bird provisions burata garlic knots). Then add a fabulous summer salad with fresh figs, goat cheese, pears and freshly picked salad greens with a tart cleanse your palate dressing to prepare you for dessert! Dessert would be an assortment of magical decadent items that I could sample to my hearts content – butterscotch pudding, salty dark chocolate caramel silky baked treat, cheesecake with fresh berries and peanut butter decadence that knocks my socks off. And a perfect cup of coffee or espresso with dessert to kick in some caffeine so I don’t pass out with bliss.

    My favorite birthday meal is a homecooked one by my dad: breaded pork tenderloin, mashed potatoes and gravy, and green beans. All of this should be followed by a slice or two of chocolate cake!

    Happy Birthday! My ideal birthday meal is piles of fresh grilled veggies and lamb chops showered in fresh gremolata with lots of herbs and pistachios and charred grilled bread. Lots of wine, lots of friends and lots of chocolate cake with lots of buttercream.

    My favorite birthday meal is hands down something that my Mom would cook…niku jaga (meat and potato) with of course gohan (rice). Since my Mom has dementia she no longer can make this for me or my family but I’ve continued to create it for everyone. And from what my brothers tell me I have successfully captured the same aji (taste) as my Mom’s. Gotta be grateful that she has passed down this along with many other yummy Japanese home-style cooking to us kids.

    I love salad rolls! Don’t eat meat, but I imagine panko-crusted tofu with some tonkatsu sauce would be great in these. My ideal birthday meal is really just to go out and relax and have something I can’t easily make at home. Maybe dolsot bibimbap and chive pancakes with strawberry ‘snowflake’ (shaved frozen milk) for dessert. Happy birthday to you!

    My favorite birthday meal is pretty much anything I don’t have to cook and takes place at a restaurant with white tablecloths and multi-courses. I know that seafood would be on the menu (probably crabmeat), a soup, a salad, and of course dessert like creme brulee.
