- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1 tsp dark soy sauce optional
- 6-6 slices bacon chopped
- 6 ounces lo mein noodles or spaghetti cooked according to the package
- 1 cup snow or snap peas
- 1-2 cups shredded swiss chard
- oil for the pan
- 2 large eggs
In a bowl, whisk together the soy sauce, rice vinegar, sesame oil, and dark soy sauce and set aside.
In a wok or frying pan, fry the bacon until it is cooked to your liking. Drain off the bacon fat if there’s a lot of it.
Stir in the vegetables and cook until slightly wilted.
Add the cooked noodles and sauce and stir fry for a bit.
In another frying pan, heat up the oil over medium high heat and cook your eggs as desired.
Enjoy the noodles topped with the eggs!
