Ingredients

Chicken Souvlaki

  • 1 lb boneless skinless chicken thighs cut into bite size pieces
  • 1 tbsp avocado or extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 2 cloves garlic crushed
  • 1.5 tbsp oregano
  • 1/2 tsp salt
  • freshly ground black pepper

Tzatziki

  • 1 cup whole milk Greek yogurt
  • 1/4 cucumber grated, juices squeezed out
  • 1 tbsp extra virgin olive oil
  • 1 tsp fresh lemon juice or to taste
  • 2 cloves garlic crushed
  • salt to taste

Cucumber Salad

  • 1/2 cucumber sliced
  • 1 tbsp vinegar of choice I used rice vinegar
  • 1 tbsp olive oil
  • salt and freshly ground black pepper to taste
  • sliced red onions to garnish if desired

Instructions

  • Marinate the chicken pieces in the oil, lemon juice, garlic, oregano, salt, and pepper for 30 minutes to 1 hour.
