This oven-baked pineapple chicken is an amazing combo of sweet and sour. The chicken ends up juicy and perfectly cooked with a tangy finger-licking sauce, perfect with rice or noodles.

Dropping this quick and easy oven baked pineapple chicken recipe down because it’s what we’ve been eating lately. It’s perfect because everything just goes into the pan then into the oven. It’s sweet and sour and all things good. We love it on it’s own or with rice, because chicken and rice is life.

Oven-Baked Pineapple Chicken Recipe
serves 2


  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons chicken stock
  • oil for the pan
  • 5-6 chicken drumsticks
  • salt and freshly ground pepper
  • 4-6 cloves garlic, sliced or minced
  • 1 onion, diced
  • 1.5 – 2 cups pineapple

Heat the oven to 375°F.

In a small bowl, whisk together the honey, soy sauce, vinegar, and chicken stock.

Season the drumsticks with salt and pepper. In a an oven-proof pan, lightly brown the drumsticks over medium heat until crispy. This is just to give the skin some color – if you want to skip this step, you can. Add the sauce, garlic, onion, and pineapple.

Oven roast for 30-45 minutes or until chicken is cooked through. Enjoy!

      yes, but definitely don’t bake for as long! start checking after 15 minutes, it’ll probably be done in 18-20 :)

    Can chicken bouillon be used in stead of the stock? I do not think they sell stock in small containers. Hate to toss out most of the can or package. Could water be used or something else? Recipes sounds great…

      you can definitely use chicken bouillon or water even, but bouillon would be tastier :)
