How to Make the Ultimate Chocolate Chip Cookie

There are a ton of chocolate chip cookie recipes out there but this is my ultimate. I played around with creamed butter or melted butter and the ratio of brown to white sugar, and ultimately decided that this is what works for me. This recipe makes a cookie with crisp edges and a soft and chewy middle. It’s not too thick or too thin, it’s just right. They taste awesome warm and bonus, just as good when they’re cool.

The Ultimate Chocolate Chip Cookie Recipe
makes about 22 cookies


  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1/2 cup butter
  • 3/4 cups brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup dark chocolate chunks/chips
  • flaky sea salt, to top

In a bowl, stir together flour, baking soda, and salt. Set aside. Melt the butter over very low heat so you don’t loose any moisture and then cool to room temp.

In a bowl, whisk the cooled melted butter and sugars together until light and fluffy. Add the egg and whisk until combined. Stir in the vanilla with a wooden spoon or spatula. With the same spoon/spatula, stir in the dry ingredients until just barely combined; some streaks of flour are okay. Stir in the chocolate chips. At this point there should be no visible flour streaks.

Scoop cookie dough onto a tray or plate with a 1.25 ounce cookie dough scoop (or make 1.5 tablespoon balls). Cover with plastic wrap and place in the fridge for 30 minutes. You can also freeze these guys and bake from frozen, adding a couple of extra minutes.

When it’s time to bake, heat the oven to 375°F and arrange cookie dough on parchment paper line baking trays, leaving 2-3 inches between each cookie. Sprinkle with with flaky sea salt and bake until the tops are cracked and lightly golden, 10-12 minutes, rotating the pan halfway through. Cool on the pan, and enjoy!

    This is my exact cookie recipe too!! Except, I cream the butter with the sugars and add a little bit more chocolate, because it’s chocolate. It really is the best Chocolate Chip Cookie Recipe!

    These cookies look absolutely divine but unfortunately mine were not the same outcome. They did not spread and I followed the recipe exactly. Why?

      hi betty!
      so sorry the recipe didn’t work for you. a couple of questions: when you melted the butter, did you do it over very low heat? did you notice if you lost a lot of moisture? after melting, you should still have about half and cup of butter.

      also, how did you measure your flour? i like to loosen my flour up and do a scoop into the measuring cup and then level out. it’s possible that there may have been too much flour if you didn’t fluff your flour before hand. it also could have been overmixing.

      how did they taste?! hopefully they were tasty at least?

    These are the best cookies I have ever made and will never make another chocolate cookie recipe ever again. I used salted butter, is it supposed to be unsalted?

      i use unsalted but if you like salted butter, go for it :)

    This is definitely the ultimate chewy chocolate chip cookie recipe! I’ve tried another recipe before and was rather disappointed as the cookies were too hard and too sweet. These on the other hand were so good my husband had 3 large cookies in a row (I had to keep him from gobbling up the rest)! I’m definitely saving this as my go to recipe from now on!     So I haven’t made cookies in a couples years and wanted to make some. After some googling I decided your recipe fit best with the type of cookie I wanted to make. I have to say–these came out perfectly. They look amazing (like out of a magazine), taste amazing. I used a mix of milk chocolate at 60% chocolate chips from Ghiradelli. Thank you!
