Potato salad. Definitely the salad I make a beeline to at all picnics, barbecues and potlucks. Often I’m disappointed so, to negate that, I’m usually the one bringing potato salad to the party. This is a super quick, super easy fully loaded baked potato salad. I baked the potatoes to get that earthy flavour, but you can go ahead and boil them if that’s easier. Potatoes, bacon, cheddar and green onions. I could eat this all. the. time, especially alongside some barbecued jalapeño honey garlic chicken. Happy weekend friends!

I am usually not a huge fan of potato salad, it’s always a little bland to me. This, however, looks bursting with amazing flavor. I will definitely give it a try.

  16. I love making fusion recipes. ie – loaded baked potato into a salad. Another fun one is making a ham and brie sandwich into a pizza, and making your own honey mustard as a sauce.

  17. This sounds like it may be the perfect potato salad. I’m grilling in the park this weekend, and I think this might have to go on the menu.
