If I were someone who could eat everything without consequence, I would definitely be living my best life. A lot of the times, the in-depth serious conversations Mike and I have are about food. Like, what would you eat if you could only eat one thing for the rest of your life? Mike always has well thought out answers, but I’m always waffling between 30 different choices, then I get extra confused because I start thinking about waffles and how many types of different waffle variations there are out there and basically it’s an endless loop of food obsessive thoughts.

Sometimes I wonder why I love food so much now when I didn’t as a kid. Back when I was five my favorite food was plain white rice or plain noodles. I drove my mom CRAZY. I also regularly consumed cereal – I loved Cocoa Pebbles and CornPops. The only protein I ate on the regular was bacon. Oh, and I sometimes deigned to eat eggs. Clearly I only loved breakfast foods. Breakfast foods and carbs. So, I came up with this little homage to five-year-old me: bacon and egg stir fry noodles. I mean, what’s not to love about carbs and breakfast foods? My five-year-old self would approve.

This is a super easy dinner – which seems like it’s a theme around here lately, because it is! Mike and I have been super busy and between all our commitments and me trying to do keto and make food for the blog, we’ve been relying more and more quick and tasty easy-to-put-together dinners. These noods are your standard stir-fry lo mein, which is kind of a misnomer because lo mein actually means tossed noodles, which is kind of the opposite of stir fried noodles. I couldn’t decide what to call them though and there is both stir-frying and tossing going on so bacon and egg stir fry lo mein it is!

It was super delicious and if you love bacon and eggs and noodles, you’re in for a treat. I added some veggies in for health and it was balanced and tasty and an all around winner. Hope you guys are keeping cozy.

PS – If you’re wondering how I keto-fied this, I just switched out the noodles for shirataki :)

Easy Weeknight Bacon and Egg Stir Fry Lo Mein

Breakfast for dinner with this quick and easy bacon and egg stir fry lo mein

Ingredients

  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp dark soy sauce optional
  • 6-6 slices bacon chopped
  • 6 ounces lo mein noodles or spaghetti cooked according to the package
  • 1 cup snow or snap peas
  • 1-2 cups shredded swiss chard
  • oil for the pan
  • 2 large eggs

Instructions

  • In a bowl, whisk together the soy sauce, rice vinegar, sesame oil, and dark soy sauce and set aside.
  • In a wok or frying pan, fry the bacon until it is cooked to your liking. Drain off the bacon fat if there’s a lot of it.

  • Stir in the vegetables and cook until slightly wilted.

    You had me at eggs, bacon, and pasta! I used sugar snap peas, spinach, and a soft-boiled egg on top which oozed over the noodles. I also threw fresh minced garlic into the sesame-soy sauce. “Outstanding” said my family. Thank you!
