It’s hatch chile season and as all the posters at the grocery store say, “hatch chile is here, it’s now or next year!” Mike and I are huge fans of hatch chile, especially after our little trip to New Mexico. We even stopped in the tiny town of Hatch, but since it wasn’t quite Hatch season, nothing was going on. We saw all the giant kitschy plastic sculptures and fields and fields of growing hatch plants, but there was no roasting and the one place that we wanted to have a green chile cheeseburger at was closed.

If anything, driving though hatch during off season made us even more excited for those spicy little green peppers. So excited that we accidentally on purpose bought a whole case. Yup, 25 pounds of fire roasted hatch. I was super duper excited but for some reason I was a little crazy and we bought a box of hot. And woah, are they hot. Mike said that he actually wanted to get the mild, which would have been much more reasonable, but when I said hot, he went along with it because he loves spicy things.

So now we have a bunch of super hot hatch chile in the fridge. I think I spent about 2 hours skinning and seeding all of them, with gloves on of course. But now that that’s all done, it’s time for the fun stuff. Stuff like creamy dreamy spicy hatch green chile mac and cheese.

This is essentially your classic mac and cheese with chopped fire roasted hatch green chiles stirred in for a bit of heat. You can get creative with the cheese – I went with a mix including pepper jack just so there was even more heat. Thick and creamy, spicy comfort food deliciousness. SO GOOD.

Ingredients

  • 8 ounces pasta of choice about 2 cups small macaroni
  • 3 tbsp butter
  • 1/4 cup flour
  • 2 1/2 cups milk
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cups grated cheese of choice I used a mix of Monterey Jack and cheddar
  • 1 cup diced fire roasted hatch chile peppers or to taste

  • Bring a large pot of salted water to a boil.

  • Pour in 1 cup of the milk in a thin stream while whisking. It might start out lumpy, but keep whisking and it will smooth out into a thick paste. Add the rest of the milk and whisk until smooth. Keep on medium heat, stirring occasionally, for about 10 minutes, until the sauce thickens.

Notes

If you’re going to roast your own chile, you need about 3-4 depending on size. Rub them with a bit of oil, place on a sheet pan and broil on high until black and soft, flipping once. Place in a bag and seal (or put in a bowl and cover with plastic wrap) and let steam. Skin, stem, de-seed, and chop. You can also use canned chopped green chile.

      hi,
      you can use anaheim chile but they’re not quite as spicy. or if you like spice you can use jalapeños. or a mix of the two. hope that helps :)

      Alot of stuff..green chile chicken enchiladas, cornbread,a topping on hamburgers,in scrambled eggs. Use Google and search for hatch green chile recipes. There’s a lot of recipes. So yummy!

    You can freeze the green chile. Divide it up and put it in freezer bags. I put about 5 or 6 papers per bag. Also I don’t take the skin off or seeds til I’m ready to use. It doesn’t hurt anything and saves time instead of doing all that chile at one time. I’m usually finishing the last of the chile in June or July. Also Google hatch green chile recipes and it’ll pull up alot of recipes. Good luck.

  3. I’ve been using Jared hath cookies to make mac n cheese for years. They only thing I do differently is when I melt the butter I add minced onion, saute it, then add the flour. I also add a can of cream of mushroom soup. It’s so rich & creamy!

    We have green chile stew for breakfast – ground meat (we usually use ground turkey and like to make it brothy), corn, potatoes, green chile, with warm tortillas and a pot of pinto beans going on the side. We put green chile on top of our eggs, burgers, sandwiches, as a garlic/vinegary side dish to everything. Also if you have the time to make them….chile rellenos. And of course there is chicken enchiladas with green sauce!

    re: hatch ideas, yes, I’m stealing it from a restaurant (don’t remember the name) one of the best burgers I’ve ever had, was hatch-chile verde topped burger, simple but wonderful flavors (fritos may also have been added..) but love your mac and cheese infused with hatch chili, a great idea since it pairs so well with cheese, just like that burger, I think it was jack cheese

      it’ll serve about 3-4 i’d say, depending on how big eaters you have and if you’re serving anything else. usually i do about 2-3 ounces dry pasta per person. hope that helps!
