It’s carb-loading season, my most favorite of all the seasons! When the weather starts to turn chilly, you know it’s time to light those candles, grab those bowls, and eat those noods. I’m not sure why I don’t eat pasta out of a bowl more often. When I was in high school, I feel like I ate primarily out of bowls. But then, as I got older I started eating on plates more? Still there’s something so so comforting about a bowl of pasta: cradling it in your hands, sitting on the couch, a huge Netflix queue lined up. Yes, I’m still watching, stop it with your judging Netflix!

This is the perfect pasta to make on those nights when you’re feeling extra lazy because it is literally 2 ingredients: cheese and pasta. Not just any cheese though, Boursin! Have you had Boursin by the way? It’s a French cheese from Normandy that is creamy, slightly crumbly, and full of buttery herby smooth flavors. My favorite is the classic, garlic and fine herbs. I love eating it with chips, veggies, on it’s own, and especially with pasta.

All you do is boil your pasta, save some pasta water, drain the pasta, then mix together the starchy pasta water and Boursin to loosen out the sauce. Add the pasta in, taste, and devour. Super simple, one pot, two ingredient, delicious delicious carbs.

It’s a super creamy, super easy mac and cheese-ish kind of bowl but just a little bit fancier so you know you’ve grown up.

Key Steps:

  1. Save the pasta water before draining your pasta – it’s what loosens the cheese into a sauce and makes it extra creamy thanks to the starch that comes off the pasta when you cook it.
  2. Think about your favorite pasta shape. I used penne because it was what was in the pantry, but I think this would be perfect with fusilli because of all the twists that the cheese can get trapped in.
  3. Undercook your pasta by one minute, then finish cooking it in the sauce so the sauce literally gets cooked into the pasta giving it more flavor.

2 ingredients: pasta and cheese come together for a bowl of quick comfort

Ingredients

  • 6 ounces pasta of choice I used penne
  • 1 package Boursin Garlic and Fine Herb flavor

Instructions

  • Bring a pot of salted water to a boil and cook the pasta 1 minute shy of al dente according to the package directions. Reserve 1 cup pasta water and drain well.

  • In the same pot, melt the Boursin into 1/3 cup pasta water over medium heat, stirring to combine and create a smooth and creamy cheese sauce.
