It’s March! February passed by in a flash and I have to admit, even though I was into the snow a couple of days ago, I am ready for spring. I can’t wait until I don’t have to wear layers and I’m dreaming of the day I can walk out of the house without a heavy coat. The best part of almost spring is the almost spring vegetables.
If you’re looking for what to cook in march, I’ve got some lamb dishes because lamb is both spring-y and Easter-y. I’ve also got some pies because Pi-Day and a couple of St. Patrick’s Day recipes. It’s going to be a great March! Let me know what you’re going to be cooking :)
Spicy Lamb Ragu with Peas – There’s something about springtime and lamb and peas. This ragu is meaty, rich, and perfect over pasta.
Lamb Shepherd’s Pie – I LOVE this shepherd’s pie. It’s made with bone-in lamb shoulder chops instead of ground lamb and it is absolutely fantastic.
Lamb and Pea Lasagna – Lamb and peas together again layered with tender noodles and a cheesy white sauce.
Mini Beef and Broccoli Hand Pies – Flaky pie crust, gooey cheddar, beef and broccoli all in one perfect little package.
Hainanese Chicken Pot Pies – All the simple goodness of Hainanese chicken (ginger, green onions, garlic) in a puff pastry topped pot pie.
Cheddar Cheese Crust Beef and Beer Pies – Cheddar cheese in the crust with beef, peas and potatoes tucked inside.
Pot of Gold Pasta – Homemade orecchiette “gold coins,” yellow tomatoes, and creamy bocconcini. Serve it up in a lil pot so it looks more like a pot of gold.
Rainbow Jello – Follow the leprechaun to the end of a jello rainbow! Layered jello is just too fun, both to make and eat.
Bonus: Filet o’Fish and Fries Burger because who doesn’t love a fish burger with fries. And also just in case you’re eating fish for lent ;)
