You’ve been doing summer all wrong – you need this BLT burrata lettuce tomato sandwich in your life: creamy burrata, crisp lettuce, and the best, most essence-of-summer tomatoes you can find.

Is it really summer if you don’t eat a perfect tomato sandwich with juice dripping down your chin? I say, no. The other day Mike and I had sandwiches and we had a little conversation about summer and tomatoes.

Me, after a huge bite: Now it feels like summer.
Mike: The tomato made you feel like it’s summer? The 110° heat didn’t help?
Me: Nope, you need tomatoes for it to be summer.
Mike: You know what I need? Bacon. Where’s the bacon in this sandwich?

To be fair, he was right, bacon would have made this sandwich crazy over the top good. But for now I’ll be satisfied with eating as many tomatoes as I can, either in sandwiches or not. Summer don’t leave! But also, I’m ready for ALL the fall things! I’m so all over the place, I know >_<

BLT Burrata, Lettuce, and Tomato Sandwich Recipe
makes as many as needed


  • crusty bread of choice
  • baby gem lettuce or lettuce of choice
  • in-season tomatoes
  • burrata
  • extra virgin olive oil (the good kind)
  • flaky salt and freshly ground black pepper

Toast the bread. I like a deep crunchy with a hint of chew in the middle, but go with whatever floats your boat. Lightly drizzle with olive oil then top with baby gem lettuce leaves. Layer on slices of tomato seasoned with salt and pepper. Place a generous amount of burrata on top – it will be oozy, as is the nature of burrata. Drizzle on olive oil and season with plenty of salt and pepper. Place the bread hat on top, then enjoy immediately, with lots of paper towels at the ready.

    omg! Where do you get your burrata from? I’ve only ever found “just okay” burrata at IGA

      where are you located? i got mine in the states, they have pretty good burrata at murray’s cheese shop :)
