Guys, it’s grilled cheese season. Technically, grilled cheese doesn’t need a season, but if it had one, this would be it: crisp chilly air and sunny short days. The perfect weather for crunchy bread and warm gooey cheese. Spinach and mozzarella go together like, well, spinach and mozzarella. They happen to be one of my go-to combos, weather own it’s own, pasta, dip, or, in grilled cheese.

Spinach and mozzarella together isn’t anything new, but sandwiching them between slices of pretzel bread, well, it was something I got excited about. The pretzel bread really makes this sandwich, adding maltiness and flavor that regular white or brown won’t give you. It crisps up nicely on the outside while staying completely soft and tender on the inside. But, even if you don’t have pretzel bread, you don’t have to go out of your way to find some – spinach and mozzarella basically make everything taste good!

Spinach Mozzarella Grilled Cheese Recipe
serves 1-2


  • 1 teaspoon oil
  • 2 cloves garlic, sliced
  • 3-4 large handfuls fresh spinach
  • salt and freshly ground pepper
  • 1/2 – 3/4 cups shredded mozzarella
  • 1-2 tablespoons butter
  • sliced pretzel roll or bread of choice

In a small pan, heat up the oil over medium heat and cook the garlic until fragrant and soft, but not brown, about 1 minute. Add the spinach and let wilt. Remove from the heat and season with salt and pepper to taste.

Heat up a non-stick pan on medium-low heat. Butter slice(s) of bread and place in the pan butter-side down. Top with a generous amount of shredded mozzarella, some wilted spinach, and more mozzarella. Butter the other slice(s) of bread and place on top of the cheese, butter-side facing out. Cook slowly on medium-low heat until golden brown and toasty. Most of your cheese should be melted when it’s time to flip. Carefully flip your sandwich and continue grilling. The second-side grills a bit faster, so turn the heat down to low and keep a close eye on it. When toasty brown and perfect, remove from the pan, and enjoy hot!

    I need to get my hands on some pretzel bread. But I think the only way to do so would be to make one myself. This is lovely. A funny thing is that for years I actually didn’t know that an American grilled cheese is actually just a plain a toast (in Europe griled cheese is well cheese that you put on a grill).

      i didn’t, but i know they have pretzel bread at whole foods and at swiss bakery :)
