I don’t know about you but I love a good snow storm and all the recent crazy photos of snow are making me nostalgic for my snow-filled childhood. Don’t get me wrong, Tokyo is wonderful in the winter, but the one thing that it doesn’t have is snow. The winters are really dry here, which means it’s sunny, cold and lovely everyday, but I do miss the quiet stillness that happens when it snows.

I am kind of in love with being snowed in, especially if I have a well-stocked fridge and pantry. When you’re forced to stay in you tend to get a bit more creative. Maybe your chocolate chip cookies are boosted up with bacon or your quesadillas have kimchi in them. Something about being inside when snow is falling outside makes me want to stay in the kitchen all day, not that I need an excuse.

I actually made this pasta dish back when tomatoes were still in season, but I definitely think it’s a rib-sticking dish. You can definitely leave the tomatoes out and feel free to add in another vegetable. The broccoli and tomatoes are not cooked before being put in the oven, partially because this is supposed to be an easy, breezy sort of recipe and partially because I love it when broccoli and tomatoes have a bit of bite to them. You can feel free to add them to the pan when you’re browning the sausage if you like your veggies a bit more tender.

Pasta, Sausage & Broccoli Bake
serves 4-5

  • 1 tablespoon oil
  • 1 1/2 teaspoons crushed red pepper flakes
  • 1/2 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1/2 carrot, shredded
  • 28 ounce can crushed tomatoes
  • 8 ounces rigatoni
  • 3 spicy Italian sausages, removed from casings
  • 2 1/2 cups chopped broccoli pieces
  • 1 cup cherry tomatoes
  • salt and pepper
  • 1/2 cup shredded cheddar (increase this as you see fit)
  • crushed red pepper flakes

Preheat the oven to 375°F.

Heat the oil in a medium sauce pan over medium heat. Add the red pepper flakes, onion, garlic and carrots and stir to coat. Reduce the heat to low and cook for until everything is softened but not browned. Stir in the tomatoes and salt and bring to a gentle simmer, uncovered.

While the sauce is cooking, cook the pasta according to the package instructions. Brown the sausages. When the pasta is done, drain and put in a large bowl. Add the sausages, broccoli, cherry tomatoes, and sauce. Mix, taste and season with salt and pepper. Place in an oven-proof dish, top with cheddar and bake until cheese is melted and bubbly, 20 minutes or so. Enjoy hot with extra red pepper flakes to top.

      Yes, when you’re adding in the sausages, broccoli, and cherry tomatoes, add the sauce in as well! Thanks for noticing that! I’ve fixed it up.
