Mini everything pretzel dogs to celebrate the days getting chillier! Every morning before we go to work, Mike and I get up early to take a morning walk together. It’s kind of a new ritual Mike invented so I could start my day with something active and fun. We don’t get a huge amount of light in our bedroom and I’m very susceptible to feeling gloomy with a lack of sunshine, so it’s perfect for me. We get fresh air, a brisk walk, and plenty of morning sun. It makes me happy in a way that sets me up to have a great day.

Anyway, that was a very round about way of saying that during our morning walks, I’ve had to put on a coat! Which means it’s full on fall, which means it’s the start of Netflix binge watching season! Typically we don’t watch a lot of Netflix in the spring or summer just because we’re always out and about. But come cozy season, there’s nothing better that watching episode after episode of a show, while snacking.

Of course I like snacking on popcorn and chips and all that other good (bad) instant stuff, but if I’m really going to be committed, I love things like perfect nachos, miso hummus, or these mini everything pretzel dogs! Lately I’ve been all about the pretzels, but to take it up a notch, I wrapped pretzel dough around mini hot dogs and topped them with everything bagel spice.

I have to admit, I’m haven’t been a lifelong everything bagel spice lover. In fact, I had my first everything bagel last year. But ever since then, I’ve been obsessed. I like to mix up a big batch – it’s so easy – and sprinkle it on all the things! Even if you don’t make these little dogs (although I hope you do), please make the everything bagel spice because I know you’ll put it on literally everything. I think of it kind of like the American version of furikake, that addictive Japanese seasoning that you put on rice, vegetables, or fish. I’ve tried the everything bagel spice on rice and it’s goooooooooood.

PS – I’ve been binging Hello, My Twenties! on Netflix and I dig it! Mike is not as interested, but he’ll still cuddle up and hang out on his phone while I watch. What have you guys been watching? I’m always looking for new things.

Everything Bagel Spice Recipe
makes about 1/4 cup


  • 1 1/2 tablespoon toasted sesame seeds
  • 1 tablespoon poppy seeds
  • 1 tablespoon dried garlic
  • 1 tablespoon dried onion
  • 2 teaspoons coarse salt

Combine everything together in a small bowl. Use as is and store leftovers in an airtight container.

Feel free to play around with the ratios, this is just what I like!

makes about 50 mini pretzel dogs


  • 1 package (2-1/4 teaspoons) active dry yeast
  • 1/2 cup 100-115°F warm water
  • 1 tablespoon firmly packed dark brown sugar
  • 3-1/4 cups (420 g) unbleached bread flour
  • 1/2 cup cold pilsner or lager-style beer
  • 2 tablespoons unsalted butter, cubed and softened, plus more for greasing the bowl
  • 2 teaspoons fine sea salt
  • 50 mini hot dogs
  • 1/4 cup baked baking soda (see notes)
  • 1 egg yolk beaten with 1 tablespoon water
  • everything bagel spice to finish

Notes: To make baked soda, spread a thin layer of baking soda (a little over 1/4 cup) on a foil-lined cookie sheet and bake for 1 hour at 250˚F. Let cool completely and store in an airtight container and use as needed.

In a stand mixer bowl, mix the water and yeast. Stir in the sugar and let activate and turn foamy, about 5-7 minutes.

Mix in the flour, beer, butter, and salt to form a shaggy dough. Use the dough hook to knead, on medium low speed. The dough should form a ball after about 1 minute, firm and slightly tacky but not sticky. If excessively sticky, add flour, 1 tablespoon at a time. If too dry, add water, 1 teaspoon at a time. Continue to knead until smooth and elastic, 5-7 minutes.

Place dough in a lightly greased large bowl and cover with plastic wrap. Let rise in the fridge for 8 hours minimum, up to 24 hours.

Line two large baking sheets with parchment paper and set aside.

Turn the dough out on an unfloured work surface. Press down to deflate and cut into 5 equal portions. Keep the dough covered with a damp cloth and work with 1 portion at a time, dividing into 5 equal portions. Cut into small rectangles, then patting into a rough rectangle. Roll the dough up around the mini hot dogs, pinching tightly to make sure that they’re sealed so they don’t come apart while boiling or baking.

Let rise in a warm spot, until 50% bigger in size, about 30 minutes.

Arrange the racks in your oven: one in the upper third and one in the lower third. Preheat to 500°F.

Wearing rubber gloves, put the baked baking soda in a wide, shallow stainless steel pot. Fill with 6 cups of water. Be very careful not to splash the solution in your eyes or on your skin. Turn the hood vent on high and warm the solution over high heat until you see wisps of steam. Carefully remove from the heat and wait until the steam subsides.

While the alkaline water is still hot, use a large skimmer to dip the dogs, a few at a time for 30 seconds. Place on a parchment lined baking sheet. Brush with an egg wash, then top with everything bagel spice.

Immediately bake until the pretzels are deep mahogany, 12-15 minutes, rotating the pans, front to back, top to bottom, half way through. Cools slightly and enjoy warm!

Notes: this makes a lot of pretzel dogs! I like to make one batch of pretzel dough and use half for pretzels and the other half for dogs. I froze some extra dogs and have been microwaving them to heat them up. They’re not as good as fresh, but they’re still pretty damn good! I suspect that if you let them defrost completely and warm them in a low oven, they’ll be just like freshly baked!
