Mike and I have been into omelettes as of late. One leisurely morning, I made a delicious French-inspired goat cheese one. I asked Mike if he wanted me to make him one too, but he declined. But, after I convinced him to take a bite of the deliciousness, he was inspired and made his own. I think it’s amazing how many ways there are to cook a simple omelette. Every culture has it’s own version and it would be amazing to make each and every one. It wouldn’t be much of a stretch for me either – I absolutely love eggs.

In case you’re curious, this is the recipe I based my omelette on and here is the video Mike followed. My omelette didn’t turn out as glossy as Ludo Lefebvre’s, or as perfectly cooked (I kept it on the heat a touch too long), but it was delicious nonetheless. I’m in an omelette state of mind…

Webstuff:

1. I’m in love with xiao long bao, and this guy must be too because he spent a year eating dumplings so he could create the ultimate XLB index!
2. Are you a mixed signals sender?
3. Josh on the eternal debate: are hot dogs sandwiches?
4. Cryogenics: heartbreaking and hopeful.
5. Preparing for the long and lonely voyage to Mars.
6. Owl City is back and this song makes me smile!

Link Love:

1. These shoyu sugar spam kimchi musubi croissants are my everything.
2. Yes, yes, yes to mango desserts!
3. I love spring roll. I love potatoes. Obviously I love these loaded baked potato spring rolls.
4. The fluffiest pancakes!!

I’ve got my eyes on you:

1. Thinking of getting a Fjallraven mini pack – I haven’t had a backpack in years but I think I need one now.
2. Then again, maybe I just need a watermelon tote?

Hope you all have a wonderful weekend!

love & potatoes,
xoxo Steph

  1. Wow, that XLB article is intense (but so fascinating- I’m glad someone else can do the hard stuff while I burn my tongue on soup!).

Those pancakes look amazing. They almost remind me of English muffins with that height, but with less craggly bits.

  2. Kay says:

Potato spring rolls?! I need these in my life!!!

  3. Umm that omelette is pretty much perfect. I think you’re giving Ludo a run for his money! ;)

  4. Josh says:

Ha! Thanks for the shout out dude! I think everything is a sandwich now. Put peanut butter on a pretzel? That’s a sandwich. Bowl of ramen? Sandwich. Glass of water? Sandwich. Book? Sandwich. Dude scrambled my brain real hard.

  5. Those pancakes! They are like a weird pancake / biscuit / cake love child!

  6. I’m going to Shanghai in November to visit my dad and bookmarked the XLB places !!

  7. Abby says:

Ooh, now I want an omelette….

  8. Alana says:

HOLY PUFFY PANCAKES. Can we have a brunch party and make those the star? Also, perfect omelette. Totes giving it a go but also adding Petit Trois to my list. How was Mike’s? Curious to hear what you thought about that style.

P.s. THANK YOU for the link love. <3

Those mini backpacks are everywhere in Helsinki! Everyone from school age to grandma had one! It made me want to get one of my own, too (and I still do!).
